New kitchen is now up and running

Posted by Wayne F on June 12, 2013 0 Comments

This past Saturday we did our first cook in the new kitchen, using some of the super duper equipment financed through our Kickstarter campaign, and it was a great success!

We now have access to two 40 gallon steam kettles, but we just ran one on Saturday just to see how it worked. We produced 27 cases out of that one kettle, and could have easily done 10 more.

The recipe scaled beautifully - taste and texture were spot on!

Matanzima gets 5 out of 5 peppers for flavor at eatmoreheat.com

Posted by Wayne F on December 23, 2011 0 Comments

Check out the review of Matanzima at Eatmoreheat.com:

"The flavor ends up being really interesting on this product, it comes across as an immediately sweet and slightly savory and pungent tomato flavor, and then as you bite through the mustard seeds, you get a bit of a twist on it, and then the slight layer of heat sneaks up on you within a few seconds with a lot of the ginger and cumin flavor with it..."

"I think it would probably make a pretty amazing chicken wing sauce just on its own"
